No-sugar-added Oatmeal Cookies

Recently, I have come to realize that taste buds and cravings change with age, experiences, and when you are intuitively listening to your body. That once seen as a dreadful oatmeal raisin cookie instead of what you thought was chocolate chip, is now actually very pleasant. Oatmeal cookies and oatmeal raisin cookies are extremely underrated, end of the story. So I decided to create my own healthy, oil-free, and low sugar version of these original treats! This recipe is for soft and chewy healthy oatmeal cookies! This no-sugar-added oatmeal and raisin cookies are so delicious and have been a go-to snack of mine when I am craving a treat.
No-sugar-added Oatmeal Cookies

Bakes: 20-24 cookies
Ingredients:
1 ¼ cups quick oats
1 cup whole wheat flour or quinoa flour
1 ½ teaspoons baking powder
1 ½ teaspoons cinnamon
½ teaspoon kosher salt
2 large overripe bananas mashed
1 large egg plus 1 egg white
1 teaspoon pure vanilla extract
3 to 4 tablespoons honey
⅓ cup dark chocolate chips
¼ cup craisins or raisins
Optional: Add 1/4 cup chopped pecans
Optional: Add 1 tbsp stevia for increased sweetness
Instructions:
In a large bowl, whisk together the dry ingredients such as the oats, flour, baking powder, salt, and cinnamon.
Next in a medium bowl, combine the mashed bananas, egg, vanilla, honey, and optional stevia. Mix the ingredients well until blended.
Pour your liquid mixture into the dry mixture and stir until just combined. Fold in the chocolate chips, craisins, and walnuts. Refrigerate the dough for a few hours, if too runny
Preheat your oven to 350 degrees F about 176 degrees C. Line a baking sheet with parchment paper. With a cookie scoop or spoon, drop the dough into a 1 to 1 ½-inch ball and arrange on the baking sheet. Gently flatten each cookie to be about ¾-inch thick.
Bake until the cookies are golden and firm around the edges, about 9 to 10 minutes. Enjoy!
